Scrambled “eggs” with onions, bell peppers and tomatoes


1-Cup chickpea flour

1 to 1½ -cup spring water

A Dash of Salt

1-Teaspoon turmeric

1-Tablespoon olive oil

1 Onion

1 Bell pepper

1-2 Roma tomatoes



In a bowl, mix the chickpea flour, salt and turmeric. Add water until you get the consistency of beaten eggs.  In a pan, add olive oil and sauté onions, bell peppers and tomatoes (can add as many veggies as you prefer).  Add batter and scramble!
